A jungle girl staple: Avocados

Holy Guacamole!

Avocados are definitely one of my top favorite foods.  Luckily, this is particularly fitting because there is an awesome avocado grove just down the trail from my jungle lodge.  Sometimes I'll come back from a hike with a backpack of 20 or more avocados. It's wonderfully loco!

Avocados are loaded with healthy fats, as well as potassium, and a variety of other important vitamins (particularly Vitamin C and Vitamin K) and nutrients. Half an avocado has 160 calories, 15 grams of healthy unsaturated fat, and only 2 grams saturated fat.  If you're suffering from "fat phobia", now is a great time to start adding some small amounts of avocado into your diet.  These healthy fats are essential for your body!

To get you started, here's one of my favorite guacamole recipes. I also say skip the chips and go for sliced jicama or carrot sticks to dip in the Guacamole.  Yummy! Let's call it a Mexican night!

Ingredients
    •    3 avocados - peeled, pitted, and mashed
    •    1 lime, juiced
    •    1 teaspoon salt
    •    1/2 cup diced onion
    •    3 tablespoons chopped fresh cilantro
    •    2 tomatoes, diced
    •    1 teaspoon minced garlic
    •    1 pinch ground cayenne pepper (optional)

Directions

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper.  Serve immediately or refrigerate with the pits to keep it from browning.
